Roasted Cauliflower Salad with Lemon Dressing, Toasted Almonds and Blueberries

This salad is absolutely delicious. It has everything that a good diet requires. It is full of fiber, very tasty. Simply a power salad. I will give you the recipe for Vegans, but you can add Parmesan cheese to make it even tastier.

Here we go:

What you need:

For the salad:

1 large head Cauliflower

2 Tablespoons toasted almonds

1/4 Cup Dried cranberries

1/4 Cup Olive oil

1/4 Cup Shredded Parmesan cheese (Optional)

For the dressing:

1/2 spoon Lemon zest

2 tablespoons Honey

1 tablespoon Dijon mustard

3 tablespoons Olive oil

3 tablespoons Freshly squeezed lemon juice

What you do:

Preheat your oven to 400F. Line a foil baking sheet on your pan. Cut the cauliflower into florets, put them on the baking sheet. Drizzle with olive oil, salt and paper and bake for 50 min until golden brown.

In a small bowl combine the products for the dressing. Pour over the warm cauliflower. Enjoy!
